in the RUFFONI collection is our passion for the history and culture
of copper more evident than in our range of molds. In the XVII
century the use of molds was widespread and the inventiveness of
the craftsmen created an infinite number of shapes and sizes. Our
collection reproduces the shapes of antique pieces, spanning centuries
of European design including shapes devised by Chef Marie Antoine
Carerne, "the architect of French cuisine."
The range is completed with contemporary models that are suited
to new gastronomical needs. They are made of solid copper, tinned
over the fire by hand and given the finishing touches with skilful
blows of the hammer. Thanks to meticulous research into shapes
and dimensions, they spark the creativity to create chocolates,
biscuits, canapés, flans, aspic, jelly, soufflés,
blancmanges, cakes, ring cakes, plum cake, iced desserts... The
list is endless.
Their warmth, their delightful shapes and decorations invite you
to start a collection. More than just beautiful, Ruffoni Copper
molds are made from old-world designs that have graced the kitchens
of Europe for centuries. Each mold is heavy weight and has extraordinary
detail. Larger molds have rolled edges for extra strength. These
molds have exceptional conductivity for even browning or quick
gelling. All come with a loop for hanging; they are too beautiful
to put in a drawer!
